it should be with in a few degree of thermostat rating, so if it has a 190 degree thermostat, then when it's all warmed up it should be 190 degree plus/minus 10 degree.
is it over heating or not getting hot enogh?, there are a few bulletins on the cooling system.

thermostat may open around 190 but engine on long trips runs (normally) between 200F & 210F.
it opens at around 238/240,
